This pithy, energetic survey of a spectrum of creative approaches to food as art, design, science, and performance includes the work of photographers and sculptors, chefs and industrial researchers, community organizers and political protesters. Brief profiles of more than 60 individuals, groups, or organizations are accompanied by photographs displaying elements of their work. We recognize some of those included, such as Jennifer Rubell, the British duo Bompas and Parr, and filmmaker Peter Greenaway, but there is much here to surprise us, including Enemy Kitchen, a pop-up restaurant offering food from countries with whom the US is currently at odds; New Zealander Henry Hargreaves’ Deep Fried Gadgets project, which comments on contemporary consumption habits; and Kultivator, an organic farm on a Swedish island that relies on a rotating crew of artists and volunteers for whom eating the fruits of their labor is considered the culmination of a long, single action.
Paperback. Color photographs throughout.
