No Experience Necessary
Norman Van Aken
There are five and a half pages of enthusiastic endorsements for this memoir by one of the most intelligent and influential American chefs of the past thirty years. Van Aken’s story of his evolution from short order cook to acclaimed pioneer of new world fusion cuisine is frank and raucous. His vivid writing, in which small, sharp details bring to life a first encounter with a new hire, a crisis on the line, or a slow-motion car crash of a meal in an august restaurant, elevates this far above the run-of-the-mill dutifully respectful career chronicle. Very worthwhile. And a blast to read.
