Inspired by her own growing interest in more vegetable-, fish-, and grain-intensive foods, Henry offers up a unique take on how to eat more lightly, offering classic dishes enlivened with spices and ingredients from around the globe. There is some very impressive imagination at work here, and we think most people would regard this, whether healthy or not, as just good simple food: goat cheese and cherry salad with almond and basil gremolata; wild rice and red quinoa pilaf with sweet potato, fennel, and avocado; poached white peaches with rosé white gelatin.
