This remarkable two-volume set, written by Leroux with the cooperation of Belgian chocolate maker Belcolade, offers inspiration and technical expertise in the creation of chocolate showpieces. It is in English.
The smaller volume, bound in full cloth of the deepest blue, and entitled “Artistic Book,” is a gallery of more than forty sculptures that transcend the sometimes corny popular standards that are often entered in contests. Instead of lurid flower-inspired arrangements, Leroux favors abstract creations that recall the work of sculptors such as Isamu Noguchi or Richard Serra. When he works in a more representation mode, such as a wave inspired by Hokusai’s Great Wave of Kanagawa, the results are just as dramatic.
The larger volume, called the “Technical and Practical Book,” demonstrates a dazzling array of methods for creating forms, colors, decorations, and finishes, which are employed in a separate series of smaller sculptures. All the steps are well-documented in step-by-step photo sequences. Please note that while the pieces displayed in the Artistic Book are not specifically addressed in this volume, a determined practitioner can find all the necessary techniques to apply.
