This is a big topic for a little book, but if anyone can take a fun, engaging, and unique approach to butter, it’s the inimitable Dorie Greenspan.
Drawing on her time living in both the US and France, Greenspan treats us to a collection of delicious excuses to indulge (as if we really needed any more excuse!). In some recipes, such as the ode to chef Joel Robuchon’s famous potatoes and the classic and simple bearnaise sauce, butter is at the fore. In others, such as the luscious lemon curd, the miso-butter double salmon rillettes, and the frontier clam chowder good butter is absolutely necessary but plays a supporting role.
