Hermé’s status as one of France’s (and the world’s) foremost bakers means he needs little if any introduction; Coimbra is a Brazilian coffee farmer-turned-photographer whose singularly beautiful work here elevates Hermé’s already spectacular desserts to an even more inspiring plane. And in truth, visual inspiration seems to be the book’s main thrust, as the type design and background color choices on recipe pages are so unsympathetic to a cook as to make actual use a chore. Still, it’s hard not be entranced by the images, and by Hermé’s ever-impressive grasp of flavor.
