In the years since elBulli closed, Albert Adrià has opened numerous restaurants in Barcelona, but Tickets has been the most enduring, a boisterously inventive tapas bar in the city’s theater district. Using a variety of new techniques, most of them suitable to the rapid preparation style of the restaurant, Adrià leaps nimbly through both familiar and surprising dishes. There are many fresh approaches to traditional Spanish dishes and ingredients, such as bacalao buñuelos and tomato salad in transparent gazpacho gelatin. But you’ll also find shrimp in lapsang souchong-infused salt; codium seaweed tempura; and spicy tuna tartar with cherries.
