Known for sculptures and large-scale installation art, Eliasson works in a Berlin studio where he and his staff, as well as visiting artists, art historians, and others, gather daily for a shared lunch prepared on site. Some recipes come from studio workers’ families; others have evolved at the hands of dedicated cooks. The food is vegetarian and the recipes here provide quantities for either 6 or 60 servings (many people work at the studio). Dishes reflect a wide range of traditions: falafel, pizza, kimchi, cauliflower sambal, caramel flan. Throughout the book are photographs of people at work in the kitchen and the studio, as well as of some of Eliasson’s work, and essays by various contributors to the kitchen project.
