Geranium is a 3 Michelin-starred restaurant in Denmark, run by Chef Rasmus Kofoed (the first chef in the world to have successively won bronze, silver, and gold at the Bocuse d'Or, and Chef of the Year by the Danish Food Guide) and Søren Ledet, who was originally co-chef but evolved into sommelier and manager. Geranium was No. 2 in the "World's 50 Best Restaurants" in 2021 and No. 1 in 2022.
The Geranium kitchen, open to the restaurant, allows an osmosis between the chef, his brigade and customers, thus seeing the ballet of dishes evolve to the final result: plates that restore, challenge and enrich, all through balanced preparations. With a very clean style, going to the essential, this book takes us into the world of this exceptional organic restaurant. The restaurant has built its reputation through a focus on local ingredients and inventive techniques.
The book includes 19 dishes with detailed recipes and beautiful photography by Claes Bech-Poulsen.
