Two women of Italian descent have devoted themselves to creating practical, everyday gluten-free recipes for typical Italian dishes, or at least dishes which evoke Italian cooking.
From pizza dough, gnocchi, and biscotti to eggplant parmesan, baked clams oreganata, and lemon ricotta cake, Senza Glutine focuses largely on traditional dishes and flavors, though there are occasional innovations, such as the addition of peaches to Caprese salad.
An ingredient guide highlights their preferred gluten-free pasta manufacturers, as well as their takes on various gluten-free flour mixtures, including which are most suitable for particular uses. Some, for instance, work better for non-yeasted baked goods, while others are useful in bread and pizza doughs.
Self-published, Senza Glutine features the author’s own photographs and a generous number of tips, as well as guide to cooking and prep times.
