A dish of rice with sea urchin and black sausage—inspired by a fisherman’s breakfast—appears a few pages from a chard millefeuile with pink grapefruit and Kalamata olive dressing. Several hundred pages later, a dessert of beet gel, purple shiso, hibiscus and lavender is closely followed by sourdough ice cream with sherry vinegar meringue.
The book’s oversize format allows the presentation photography to shine, and running commentary from the Rocas explains their sources of imagination, which are manifold, from trips to China to childhood toys. And a deluxe double gatefold presents photos of more than 80 herbs and flowers which the Roca’s delight in employing in their food.
