Located in a dramatically sited and architecturally significant building which celebrates a Danish city’s historical connection to the sea, the restaurant Lyst is testament to the continuing creative culinary ferment in the Nordic countries.

This large format (10” x 13”, 368 pages) book showcases dishes created with food sourced from within a 100-mile radius of the restaurant. Vibrant full-page four-color photographs display dishes such as fjord lobster with oyster water sauce and forest herbs and cod skin with smoked roe and seaweed cured cod loin. Please note, however, that there are no recipes offered.

The building which houses Lyst was designed by Studio Other Space, a collaboration between architects Olafur Eliasson and Sebastian Behman. Their commentary on the space and the food served within it runs through the book, along with that of farmers, fishers, other suppliers, and the restaurant’s cooks and staff.

All of this combines to present a vision of a restaurant which is singularly of its place, and even of its moment, since at Lyst, even the weather forecast determines what will be on the menu on any given day.

The book is beautifully produced with high-quality photographs. It is bound in foil-stamped heavy-grade acrylic-infused cloth textured to appear like leather. There are four different colors of binding, ranging from a deep burgundy to a warm orange; please allow us to choose the color of your book.

Hardcover. Color photographs throughout. In Danish and in English.
