Echaurren, a restaurant located in the Rioja region of Spain, celebrated its 125th anniversary in 2023. Francis Paniego is the fifth generation chef and owner, following his mother Marisa Sánchez (1933–2018). Under their leadership, the restaurant prospered, modernized, and earned Rioja’s first Michelin star in 2004.
This 2008 cookbook is a handsome showcase of the chefs’ hearty signature dishes, including ham and chicken croquettes, bacalao with tomato sauce, truffled meatballs, pig trotters, and simple roasted lamb served with potatoes or salad. The recipes are organized by season, and each section includes at least one light and simple dessert like a flan or a cream cheese tart glazed with raspberry gelee.
Our copy is unused, though showing signs of long shelving with bumped corners and wear to the case. A great glimpse into regional Spanish cuisine, as well as inspirational for professional cooks. In Spanish.
