One of the most admired chefs working today, Denmark’s Rene Redzepi (1977– ) has built a storied career around the fundamentals of cooking from nature. Working with relentless energy, he has developed a distinctive style, applying such processes as fermentation and dehydration to the resources afforded by the rugged Scandinavian landscape. 

Whether fish and local meats or lichens and sea vegetables, Redzepi gathers much of his own ingredients and offers a memorable menu at his Copenhagen restaurant, Noma (a shortened form of the Danish words for Nordic food), which he opened in 2004. Although he spent many of his early years living near the Adriatic, his offerings are mainly North Atlantic in character.

Redzepi propelled his restaurant to international recognition and published his first book Noma: Nordic Cuisine in 2006. The printings, offered in Danish or in English, were small, and, although they attracted great attention, did not entirely please the chef. He never reprinted the book, replacing it in 2010 with a more expansive work called Noma: Time and Place in Nordic Cuisine, which went on to become a major international best-seller.

However, for many people, the original Noma book remained the basic down-to-earth statement of Redzepi’s vision of food and of his rugged style. The demand for the original far exceeds the few thousand copies available, and the value of the book soared accordingly.

We are pleased to offer a signed first (and only) printing at a price that is, comparatively, a bargain, due to its slightly beat up condition. Our copy hails from the former French Culinary Institute library, which was liquidated when ICC bought out the culinary school. Library book accoutrement included: bumped and cracked corners, sticker residue to the spine and rear of the case, file card holder at the rear, and school stamp to the front endpaper. Otherwise clean and unmarked.

It is a book of historic significance, and this is a rare opportunity to acquire a copy, in any state, for a personal or an institutional collection.
