The Monastery of Solan is, despite its name and location northwest of the former papal city of Avignon in France, a community of Orthodox Christian women. They strive to feed themselves as much as possible from the vegetables they raise within their organic gardens. The title translates as The Faith, the Pitchfork, and the Fork.
This handsome book presents their philosophy of growing and eating, as well as their recipes, most of which are vegetarian, though some seafood is used.
In sections with names which translate to things such as The Rejoicing, Herd Power, and The Song of the Earth, they offer recipes which, while simple, are not austere. Thanks to good photography they are appealing as well, and include influences from around the Mediterranean and even beyond.

Potato pancake with sauerkraut
Swiss chard with sage confit
Glazed leeks with cashew and lemon
