Although he was born and raised in Argentina, Mauro Colagreco’s culinary career has been spent largely in France, working with chefs such as Bernard Loiseau, Alain Passard, and Alain Ducasse before he opened Mirazur in Menton, France, so close to Italy that he could walk there in three minutes.
The restaurant’s recent appearance at #4 on the World’s Best 50 restaurants (the highest placement of any restaurant in France) has created intense interest in the chef’s work and we’re delighted to have this book in English at last. Reflecting Colagreco’s obsession with local ingredients, the book offers profiles of the farmers, foragers, winemakers, and other artisans who supply the restaurant.
The featured dishes—all of them beautifully photographed—focus on a few contrasting flavors: beet with smoked eel and sherry vinegar; oysters, pear, and wild cress; grapefruit, elderberries, and white chocolate. Given that the restaurant sits on a hillside above the Mediterranean, there is an abundance of seafood.
