Cooking with a short ingredient list can train a cook to rely on versatile and flavorful ingredients. That certainly seems to be the case with Katy Beskow, a British food blogger, who offers here some bright ideas for contemporary home cooking without animal products
It's pleasant to imagine sitting down to the likes of cumin-roasted cauliflower and mango salad, a chunky chili made from sweet potatoes, bell pepper, kidney beans and tomatoes, or a twice-baked pumpkin and sage macaroni when comfort food is called for. Beskow's desserts suggest some interesting ideas as well: a lime curd made with soy milk instead of butter and eggs; a lemon and olive oil shortbread; and a fascinating "fridge cake" (must investigate those!) made from pretzels you coat yourself with dark chocolate, along with popcorn and golden syrup.
