At the age of 23, Kobe Desramaults took over his parents’ French bistro in Dranouter, Belgium. Within 2 years, he had earned it a Michelin star.
Desramaults then published his first book, In de Wulf, named for the restaurant, in 2010. In a refreshingly humble approach for a chef at the top of his game, Desramaults places as much emphasis on the small local purveyors and ingredients as on the 40 or so dishes which utilize them.
Each chapter begins with a profile of the animals, spirits, produce, and their stewards, a worldly—sometimes literally dirty—contrast to the delicate, crisp elegance of the resulting dishes. It is an honest juxtaposition that conveys the complexity of haute cuisine.
The book was never issued in an English translation, so we offer here the first printing, in Dutch, in Near Fine condition.
