This handsome book of Persian home cooking offers a photograph for nearly every one of its 100 recipes.
Most are staunchly traditional, a tribute to author Leila Heller’s generously spirited mother, but there are elements of adaptation: in a salad traditionally made with lentils and bulgar, for example, the bulgar has been replaced by quinoa.
Recipe names are provided in English, in Farsi, and in Persian script, and there are sidebars addressing elements of Persian culinary history. Headnotes do a good job of highlighting regional elements of Persian cooking, and we’re reminded throughout the book of the way the cuisine features tanginess in many of its key dishes, as well as the Persian love of rice.
Be aware that the type used in ingredient lists and instructions is small.
