Drawn from Noah Galuten's popular YouTube Channel of the same name, The Don't Panic Pantry Cookbook offers everyday dishes that reflect the way many people aspire to cook: a strong emphasis on vegetables, shorter ingredient lists, and simple preparation.
For example, broccoli pasta has just seven other ingredients besides broccoli and pasta, and they're salt, olive oil, garlic, dried oregano, crushed red pepper, some optional basil, and fresh parmesan cheese. Krauty beans are ready in less than ten minutes.
And like many people and their aspirations, the book and its subtitle sometimes diverge. There are meat dishes here, and meat-optional dishes. You can riff on that broccoli pasta by adding sausage or anchovies. A dish of mozzarella marinara becomes the seed for several other recipes involving sole and chicken.
So this is a relaxed book, not a rigorously defined one. And maybe that's just what you'd like in the kitchen.
